Chinese Head Chef Chan Chong Yan

Chef Chan is one of the experienced head chefs in Toh Lee Chinese Restaurant of Hotel Nikko Kuala Lumpur having being in the industry for more than 20 years. He grew up humbly in the city of Kuala Lumpur. When he was young and energetic, he hunted for jobs and opportunities everywhere, with an objective in his mind, to earn a living for his family. Finally, he found himself in the world of Chinese Cuisine.

Now, at the age of 44, Chef Chan has accumulated uncountable precious skills and knowledge. Throughout his journey in this industry, he had gone through many trials and tribulations to learn from the very bottom. Due to his humble personality and determination in doing his very best, he has now become one of the respected head chefs in the hotel.

Prior to joining Hotel Nikko Kuala Lumpur, he had worked in many restaurants and hotels. From 1985 to 1986, Chef Chan committed his time and effort in Shangri La Hotel, Kuala Lumpur. Thereafter, he was also serving in Dynasty Hotel in 1994. From 1989 to 1992, Chef Chan decided to venture overseas and was with a reputable Chinese Restaurant in Oakland, New Zealand.

Apart from overseeing Toh Lee Chinese Restaurant, Chef Chan is also responsible for the Chinese section of banqueting such as weddings, corporate annual dinners, buffets, banquet dinners and seminars.

According to Chef Chan, in order to increase one’s horizon in creating new dishes, one has to be adventurous in exploring and trying out the variety of food and taste available in the world. As a result, he and his team came up with all kinds of unique dishes, taking food and taste from other cultures to blend with the Chinese Cuisine. For example, the Bento Set Lunches, which is a one of a kind Japanese set meals with a bit of Chinese influence.

Along the years, Chef Chan’s interest in cooking has gradually grown to become a passionate affair. To ensure quality and variety in the specialties served at Toh Lee Chinese Restaurant, Chef Chan and his team constantly renew both the a-la-carte and dim sum menus whereby new and creative dishes are added every six months. Apart from that, the team makes an effort to conjure monthly specialties throughout the year to tempt and satisfy the palate of the discerning diners.
